Soil
Deep layer of Loess (= calcerous loam-soil, aeolic sediments deposited in the last glacier-time) with layers of gravel-conglomerate of ancient Danube-terraces on some parts underneath.
Harvest und Vinification
At 5.00. in the morning we picked the grapes, which were frozen hard like stones, with 28° KMW by hand. In 8 hours of gentle and careful pressing, only the liquid extracts were pressed out of the berries. The highly concentrated cold must settled over night. On the next morning the fresh must was pulled off from the settlings. Fermentation started slowly and after 21 days the must stopped fermenting at 198 g residual sugar. On the fine lies till middle of April. Released in September 2018.
Tasting notes
Shiny golden yellow. Lively aromas of ripe yellow apples, juicy pears, ripe apricots, mandarins and a hint of exotic notes are acompanied by fine spiciness. On the palate fresh and clear fruit-notes, seducing sweetness and distinct spiciness are well balanced with an elegant body, good length.
To serve with
Aperitif, with fruity deserts like appletarte, bluecheese, gooseliverpatée.
