South-east facing vineyard on top of the Gaisberg in Stein on the northern side of the Danube river. The vines, planted in 1964, grow on steep old stone terraces, which can only be worked by hand.
Soil
Thin layer of weathered crystalline rock, hot and extremely meager, developed over mica schist and paragneiss bedrock.
Harvest and Vinification
End of October we picked the golden and fully ripe grapes with 20° KMW by hand. Destemming and four hours standing time for maceration was followed by careful pressing and settling over night. Spontaneous fermentation, temperature controlled in stainless steel for about four weeks. On the fine lees till April, bottled in July and released with September.
Tasting notes
Shiny golden yellow colour. Delicate nose of white vineyard-peaches and apricots with hints of citric notes. On the palate ripe stone-fruit, juicy yellow exotic fruit, lemon zests and hints of meadow herbs, fine minerality, crisp but complex with an elegant, long finish. Great aging-potential till 2039.
To serve with
Seafood, scallops, fish, pasta with fresh tomatoes, asian cuisine, spicy food, liverpatey, goat cheese and hard cheese.
